16 saucer scallops
Juice of 1 lime
1 tsp lemon myrtle powder
¼ cup lime mayonnaise
micro greens for garnish
1. Sear the scallops for a few seconds per side on a hot non-stick grill or frying pan, just until the edges become slightly golden and the flesh is white.
2. Place scallops on each ceramic spoon, drizzle over a little lime juice and dust with lemon myrtle powder using a fine tea strainer.
3. To serve rest on a small dollop of lime mayonnaise and add micro green garnish.
