SKYCITY Darwin’s highly regarded lagoon-side restaurant Cove serves the best steak in the Northern Territory.

Don’t just take front-of-house manager Thomas Jang’s word for it.

“We are very proud to have won,” says Thomas. “We work very hard to maintain the highest standards.”

Cove sources its beef from Tasmania’s King Island, which has a well-deserved reputation for producing world-class meat. The island’s producers follow a strict grading regime, which  means SKYCITY can buy the best with confidence.

Taking it to the next step in March, Cove will feature Little Joe on the menu. This premium quality beef is all-natural grass-fed with a minimum AusMeat standard marble score of 4, which separates it from the competition.

Little Joe is the name for achieving a dice roll of four by throwing two twos in the game of craps. There is less than 3 percent chance of throwing a Little Joe – an uncommon occurrence and near impossible to replicate … just like the beef.

“A good meal obviously starts with excellent ingredients,” says Thomas. “But there’s also tremendous skill in cooking a steak properly – it’s all in the timing.”

Cove is renowned for sumptuous steaks and succulent ribs, but it also serves quality seafood, including the freshest fish of the day.

The restaurant’s menu includes a delicious array of Territory tasting plates, including smoked crocodile, kangaroo and buffalo, which are popular with visitors and locals.

Cove has an extensive wine list and is one of the few restaurants that offers premium wines by the glass.

This is made possible by a clever piece of equipment called a coravin, which allows wait staff to pour a glass without pulling the cork.

“The coravin prevents oxidation,” says Thomas. Cove also has an enticing cocktail list, an increasingly important asset among today’s diners.

“Cocktails are more popular than ever – people love the ‘theatre’ surrounding the making of a cocktail.”

Great restaurants offer great service and Cove is no exception. Thomas and his team are focused on providing the best “steak experience” in town.

“We’ve got a young team who are all passionate about serving the best food possible.”

Set in an enviable lagoon-side position, Cove is located slightly away from the heart of SKYCITY. The tranquillity of the restaurant makes it popular with everyone from couples to business people.

Seating 85 inside and 30 on the outside veranda, Cove caters private functions including weddings, birthday parties and business events.

Taiwan-born Thomas has worked in hospitality all his life.

He moved to Australia with his parents when he was 14 and grew up in the Sydney suburb of Leichhardt, where he gained a love of fine food from the local Italian community – his first job was making the sauces in a pizzeria.

Thomas has been in the hospitality industry for more than 30 years – and still loves going to work every day.
