1/4 cup (50 g) of superfine sugar
1 cup of quartered strawberries
2 tablespoons of vodka
2 tablespoons of Cointreau
½ cup (125ml) soda water
1. Place the sugar and ½ cup (125ml) water in a small saucepan. Let sugar dissolve over low heat, then bring it to the boil. Remove from the heat.
2. Add the strawberries to the pan.Squash the strawberries into the syrup using the back of a fork or a pestle but allowing some texture to remain.
3. Pour in the remaining ingredients and divide the mixture into approximately 4 moulds.
4. Place the moulds in the freezer. Let set for 2 hours, insert the popsicle sticks, and allow to freeze until completely solid (About 4 more hours).
