Athol Wark’s parents once told him: “Why don’t you become a chef – you’ll travel and never go hungry.” His mum was right – he did travel!
After graduating, Athol got a job on the QE2 and cruised to South Africa, Singapore, Hong Kong, Sri Lanka and Alaska. He has travelled the world sampling local flavours and working with regional cuisines. He is now the Executive Chef in charge of all four restaurants at SKYCITY Darwin.
Happy to be working in Darwin again after spending time at Lasseters Hotel Casino in Alice Springs, Athol is particularly proud of SKYCITY’s award winning restaurant, Cove which won ‘Best Steak Restaurant’ at the 2017 AHA (NT) Gold Plate Awards. Cove prides itself on serving “paddock to plate” meals including the epitome of grass fed beef, Little Joe, which boasts an impressive marble score of four, a feat near impossible to replicate, ensuring a flavour that is out of this world! The paddock to plate concept has been the inspiration for a new television commercial to showcase Cove which takes the viewer on a journey from the actual farm in Victoria where the Little Joe beef originates to the final plated product you are served in Cove.
