Award-winning tequila bar and restaurant Hot Tamale is bringing the complex flavours of Mexico to the Darwin Waterfront.

Hot Tamale was founded by owner David Robinson and wife Kellie in 2012 with the goal of creating “a fun, casual, lively restaurant”. David started his journey in hospitality working in commercial kitchens and a wide range of restaurants. “It was an amazing grounding in hospitality,” he says. Mexican cuisine isn’t a common sight in Australia, making Hot Tamale all the more attractive. “We were inspired by a trip to America and Mexico a few years earlier,” says David. “We came across some amazing tequila bars and Mexican cuisine, which was a totally different to the perception of Mexican food in Australia.” Hot Tamale has always centred its menu around street-style tacos. “Our hero would be the Spanish mackerel tacos,” says David. The exotic tequila bar also stocks a range of modern Mexican-style cuisine fused with seasonal local produce. Menu highlights include ceviche, aguachiles, taquilos, guacamole and carne asada. Hot Tamale’s crowning jewel is their extensive range of high-quality tequila. “Tequila is a real passion for us,” says David. The restaurant has the largest range of tequila in the southern hemisphere and trains employees to be veritable experts in the field of Mexico’s famous spirit. Each week Hot Tamale features a tequila of the week to help customers explore the wide world of tequila.”Many people still have a misconception about tequila,” says David, “but for me, it is hands-down the best tasting and most unique spirit there is.” Hot Tamale does more than just tequila – it also boasts an impressive range of expertly crafted cocktails. David and employee Matt Zarimis have made it into the Bacardi Legacy competition top 30, an elite cocktail competition designed to create cocktails that could stand the test of time. “Legacy is one of the greatest challenges for any bartender’s skill and one of the truly iconic competitions,” says David. Hot Tamale caters for everyone, including large functions and groups. It offers a unique palate of Mexican cuisine coupled with some of the best alcohol in the Territory. “We are really passionate,” says David. “We have a cuisine that is delicious and diverse. “The idea of a couple of tacos and margaritas while looking over the Waterfront never grows old on me.”
